Spearmint and chocolate mint... They come back every year... Just be warned they spread like MAD! So, put them in their own space.. The chocolate mint is especially nice smells like chocomint! I've also had oregano get out of control. Mint, great, but keep it in a pot or container because it's quite invasive. Windows are great places for herbs as long as it doesn't get too hot. Sweet Cicely (Myrrhis Odoratum) is a perennial herb that is impossible to kill. Impossible to move, too. Broke my best fork trying to move that sucker. Oregano is a tough old bugger too, and gives you the added bonus of being completely covered in butterflies while it blooms. Parsley is pretty much of a snot to grow from seed. Get yourself some small plants but remember, it is a biennial, so after it blooms its second year, say "bye-bye." Purchase thyme hybrids from plants as well.
